Here’s how I keep my sourdough starter happy and ready to bake! 🥖✨

I store my starter in the fridge until the night before I need it. Then, I give it a little snack to wake it up. 🌙 By morning, it’s hungry again, so I feed it just enough water and flour to mix into my dough. After it doubles (about 5 hours later), I scoop out 20-30g and tuck it back into the fridge for its nap. 😴❄️

Here’s the best part: you don’t have to feed your starter daily unless you’re baking every day. It’s super low-maintenance, just like sourdough should be!

Let it cool before you slice it.

When bread comes out of the oven, it’s still undergoing changes that make it taste and feel its best! Here are some key reasons why cooling is essential:

1. Moisture Redistribution 💦: Freshly baked bread has steam inside, which needs time to distribute evenly. If you slice it too soon, that moisture escapes, making the crumb gummy or under-baked in texture.

2. Crumb Structure 🍞: Bread’s crumb structure continues to set as it cools. Cutting too early can compress the crumb and leave it dense, as it hasn't fully stabilized yet.

3. Flavor Development 😋: Cooling allows flavors to develop further, especially in sourdough and enriched breads. The aromas are more pronounced and satisfying once the bread is properly rested.

4. Ease of Slicing 🔪: Cooled bread is easier to slice cleanly. Warm bread, especially if still a bit soft, tends to tear or crumble.

Eat Regularly 🍽️: Do you find yourself skipping meals or only eating one thing like I sometimes do? Skipping meals can lead to stronger sugar cravings. Try to eat balanced meals with protein, fiber, and healthy fats to keep your blood sugar levels stable.

Buy Healthy Snacks 🥜🍏: Replace those empty calorie snacks! Keep healthy snacks like nuts, seeds, or fruit handy to fend off cravings. This can prevent you from reaching for sugary treats.

Indulge in Moderation 🍰: Instead of eating sweets every day, designate one or two NIGHTS each week as "dessert night." Choose something special to bake or buy from a local bakery or restaurant to indulge in. This practice has tremendously helped my family and me to reduce sweet cravings.
